This has been a rough week.



Summer is coming fast and furious like or at least thats how it feels to me. I feel defeated this week I have had a couple days of weakness due to stress from my sick baby. She has an ear infection and a cold. She has been waking up every 1-2-ish hours at night which means I wake up that much and she has NOT been wanting to go back to sleep once she wakes up which is completely not normal. So I have been tired, stressed because of that and a couple of other things, and completely worn down this has been going on for a week straight and I have hit my limit. I have only worked out a couple of times this week, tried to do a few workouts at home while she's sleeping and she has been waking up during them so that gets squashed. I have had great intentions but as we know life can get in the way we just have to find a way to overcome our obstacles. So I have devised a plan and hopefully it will help me to shred this last bit of weight hoping for quite a bit in the next 52 days and trying not to put too much pressure on myself like I did for the baby's birthday just in case I fail...again. I have also been back and forth with a cold so I feel that if I'm not up to my best with my health that I shouldn't over due it and stress my body out by working out...I know, I know there is someone out there that will feel otherwise and thats fine. But this is my body and my life.

I have been meaning to get this recipe up here sooner but I have literally had NO extra time. So FINALLY here it is.

The hubs has gotten in this attitude lately about being sick of me making the same stuff and this ''health crap" that he has been eating for over 9 months now is tasting like cardboard. So I got on Pinterest  and found a recipe I thought looked interesting and decided to give it a little twist. And it was a hit at our house!!

I call it Duffswife BEEFY BITES

Ingredients:
-1 lb. of all natural 98% lean beef
-1 package of 1/3 less fat Kraft Philly Cream Cheese
-2 packages of reduced fat crescent rolls

1. In a pan, brown the beef then drain.
2. On a baking sheet layout flat one package of crescent rolls
3. You can either blend the hot beef with the cream cheese or you can put the cream cheese in the microwave for a few seconds to slightly melt it.
4. Once the beef and cream cheese are mixed place on top of the crescent rolls.
5. Place the other crescent rolls over the top of your mixture.
6. Bake at 350 degrees for about 15-25 mins or until the crescent rolls are a light brown.
7. If you cut them in small squares then they are about 335 calories per serving.
There are approximately 12 servings.

side note: I thought it tasted a little blah so I added some light sour cream and hot sauce to mine and BAM it was awesome, the hubs liked it how it was.
